This format works well for the pointspread sports of football and basketball.

I would just let things fly up to -200 then have to play run line. If participants want to grind it out with big favs for one unit it's fine
with me. This competition is also a contrast in styles which makes it interesting.

The -110 limit during MLB season doesn't make sense.

The start of baseball also starts the single best playoffs of any sport - not even something we can argue: Stanley Cup Playoffs
When MLB starts - NHL Playoffs begin
When MLB Playoffs start - NHL season begin
So MLB is good for something - helping to know when the NHL starts/ends
Will need to be units won. I don’t think there’s really any other way to do it.
Put a range on the acceptable price. (-200 to +200 for example) but make it the same distance from EV on both sides.

And for MLB selections, -200/+200 feels right.
Keeps most of the betting board in play.
